The harder the surface the more it will dull your knives but no matter what surface you use the knife is dulling just not as fast on an end grain board. Those also cost a fortune unless you make your own. Edge grain is next best to end grain. Bamboo is a super hard wood and will dull quicker as an end grain hard wood but is still better than hard plastics. Generically wood is softer than plastic boards so better for knives, end grain is better than edge grain so better but regardless just run your knives through a sharpener from time to time and all is well. Most people don't want to spend $100-300 on an end grain cutting board so if you like bamboo just get this. If you are worried about dulling a knife faster go spend the money on an end grain and make sure to condition the wood to extend the longevity. As an aside wood is also more sanitary than plastic with proper care based on some research.

Can you explain the difference between end grain and edge grain, please?

Picture a 2x4 board. End grain is taking cuts off the end of the board where it is smallest and then facing them up. Edge grain is cutting long strips of that board going down the length of the board and then facing those upright.

You dont want bamboo cutting board. It takes massive amount of chemicals and resins to process bamboo......which is a grass....into dimensional anything. Being that it is made in China too, I wouln't want o be ingesting the micro particles that you will be creating by cutting on it and thus into this board.

What chemicals are you talking about? Bamboo is cut, carbonized (heated with steam), and then dried in a kiln. Then the bamboo is sized and sanded just like any lumber. The only difference with bamboo is the carbonizing step. https://www.core77.com/posts/8982...oards-8982
