Just a few examples: dump a bag of frozen veggies for a stir fry, put this pan over it and pour water underneath to help steam them/defrost them evenly. Another great use case is to create steam to melt cheese on burger or slider patties quickly.

The most important feature is the dome shape and those inside bumps (called "condensation points") that collect steam and make it drip back down onto your food, giving it moisture and flavor, including a heavy enough lid of a material such as steel, ceramic or cast iron with good heat retention.​​​​​​

You may notice some higher end cast iron cookware with self-basting lids - look underneath and you may see concentric rings or dimples which help trap steam.

Melting cheese atop a smash burger, although it melts pretty quickly without it. I suppose a thicker burger would benefit from it.

I agree with you, and for many years in restaurants, we used recycled aluminum cake pans and pie pans - same thing you can get at the dollar store, Walmart, etc., for a dollar or two, if you don't find a free source. It isn't like you need a perfect seal or something, so those work just fine for steaming on a flattop. Literally anything heat-resistant with any volume will work for this.

That said, this is throw-away money for some people, and some sillier folks just have to have that Blackstone logo. They're over built for this use, but that means they should last a long time. If you need a cover to melt cheese on a burger, you aren't doing it right, but these are helpful for some things.
