Cast iron distributes heats more evenly and holds heat longer. You can use this pot in the oven as a regular dutch oven or on the stovetop, besides in its portable cooker. You can bake rustic or sourdough bread in the oven in it too. Oven safe to up to 450⁰.. which is basically the knob's max temp. It's a versatile cooker much different from the Instant Pot 7-1...thats a whole different appliance. I have both of these.
