I'd rather not use an app anyhow. My work days are already spent staring at screens.
Can I access main features from the grill directly, eg setting temperature or reading thermometers?
What modifications do you recommend?

Yes the app is not necessary for any functionality. On the other brands where it works well, it is useful for monitoring long cooks like overnight or multi day smokes. It's entirely a convenience, not required for any functionality other than remote monitoring or control.
Mainly more substantial heat defection to give more even heat across all areas. Several companies make steel diffuser plates that help a lot for under $20. Pit Boss may have updated the design recently to make this slightly better without modification, but the whole grill is fairly thin steel to make the price point. A thicker steel deflector helps a lot.
Also if you have accuracy issues with the temperature of the grill (not the meat probes but the main cook temp) then another deflector to keep heat from flowing right to the thermometer location fixes it. Again, ready made products available that fix it for fairly cheap.

The heat is completely uneven - both in areas within the smoker as well as the temp control via PID/fan. The auger is hit or miss. I've had two instances where the unit didn't shut down properly (I didn't pull power nor did I lose power) and the backdraft caused the pellet hopper to catch fire.
If not for the fact that I used it sparingly the first 2 years and it's going on 4 now, I'd drag it back to Costco and test the limits of their return policy.
