Current Laptop Poweruser 80/20 Rule

I need to replace my MS Surfacebook pro 2 and it looks like Microsoft is no longer the go to company for laptops if you have need a good GPU especially. Looking for advice on what laptop brands/models/specs to look out for and set up alerts for. I use windows but am eventually planning on getting both a mac and windows laptop so interested in details about both. I'm looking for something in the current sweet spot before hitting extreme diminishing returns on cost for performance.

My use cases:
-Productivity and Coding / run local environment
-Audio Recording (Ableton Live)
-Video Editing (Premier)
-Gaming / Streaming (not competitive gaming but I enjoy some cyberpunk, elder scrolls and minecraft to let off steam, potentially willing to forgo gaming performance in favor of productivity but sure would be nice to have. Also given a good enough GPU would probably engage in some local ML activity.)
-Nice to haves would include higher nits, 1440p, an IPS or better screen 180hz, someone accurate color for image/video editing
-I'll be carrying this around in my backpack for cafe use but also using at my desk with external displays - weight isn't a huge deal but I suppose in extreme cases it could be a deal breaker

Interested in and greatly appreciate any and all thoughts / reactions / suggestions as I've really been out of the loop on the laptop situation these days

Also I should mention any audio recording will be handled through an external RME audio interface so onboard sound should be fine

So you can use the external monitor for editing just need to have the card support the settings.
