The last time this promotion ran, I had so much trouble using my Google Play credit. I had used 2 Google Play credit purchases before with no trouble at all, but the most recent time I would constantly get an error stating that these credits could only be used in the USA ( I was in the USA with location on etc). For some reason I was only able to spend these credits from 8:00 to 10:00 a.m. .... It was not worth the hassle. I had to contact Google support so many times... I would avoid this

Sounds like user error to me. My friends and I have had no issues at all using this credit.

Important: The $5 bonus would only apply once per Google play user, according to Amazon's description.Amazon description, Promotional offer terms & conditions: Valid for a $5 credit against an app, game, or in-app item with an on-store price greater than $5 at the time the purchase is made on Google Play (in-app subscriptions and books excluded). See Google Content Promotion Terms and Google Play Terms for more information. Promoter: Google LLC, 1600 Amphitheatre Parkway, Mountain View, CA 94043, USA. Google Play is a trademark of Google LLC. GOOGLE PLAY GIFT CARD® TERMS OF SERVICE apply to gift cards.Assume if you buy 2 $50 gift cards, you would only get 1 $5 bonus offer. For the best value, only buy 1 $50 gift card to get 10% more value.
You only get this $5 bonus one time on your one account, if you redeem that 2nd $50 on another account you would get that $5 offer.
I was originally thinking the same assuming you get another different code email you but the term states that you log into the account on which you redeemed the card.

The $5 credit is basically a promo unlock on the google account. Google runs this but instead of $5 they do with gaming perks like monthly, but looks like this cycle they did $5 and added Amazon specific 2nd choice for you to get the perk.

https://play.google/intl/en_us/giftcards/

Get a $5 credit towards an app, game, or in-app item purchase* when you buy a Google Play gift card of $50 or more.
Available from 12/08/2024 - 01/04/2025 at: Family Dollar HEB Walgreens Walmart Dollar General Safeway Albertsons

So you can't stack this to a single account. BUT, you can cross fund if that is your thing.

So buying 2 cards you will get $5 bonus offer on each card but it's tied to the redeem code.
Lets say you're doing the game ZZZ.
Claim the $50 code and get $5 unlocked on the first google play account.
Buy out whatever ZZZ that values out the $55.

Swap to the 2nd google play account,
Claim the 2nd $50 code and get $5 unlocked to the 2nd google play account.
Buy out whatever ZZZ that values out the 2nd $55.

So unless you're cross funding something like a game or service not hard locked to your google account,
(which is usually not a good idea unless you're doing point spreading for google perks, max usage benefit would just be the 1 time $5 for single account focused users.).
In terms of gaming, the $5 pretty much just covers the tax on the game purchase.

Best value if you're spending on a game where tax is not enabled.

It's not $5 credit, it is a freaking $5 off coupon toward a single app/game/in-app purchase of $5 or greater. Google is shady AF.

This seems incorrect? I can't get the coupon to work for Google One storage and it specifically says it doesn't work for in-app subscriptions.

What coupon? You add the Google Play gift card to your account and then pay for the subscription with your Google Play credit. The $5 credit is a separate offer.

You say "these can be used", meaning both the gift card and the $5 credit. The $5 credit is worthless for those subscriptions.
