I picked up the PSN sale for it last week; Maverick edition.
I may be wrong but I'm wanting to say the Maverick Edition is just the base game with a few bonus skins and such. What I'm watching for is the DLC with the additional missions.

Yeah I think you're right, I haven't started it. Got it DL the other day. Just wanted to try it out first.
The Top Gun DLC goes on sale all the time on PlayStation.

That is the DLC that has the Maverick fighter and skins if I remember correctly. The DLC I'm watching for is the additional missions and for the 3 or 4 months I've been watching, Ive yet to see any go on sale on PSN.
