My apartment has a low faucet, so it is harder to clean dishes. Would it be worth asking property management if I could replace mine with this one?

If anything, make sure to get it in writing that they are agreeing to it. They may ask you to cover repairs/damages if not installed properly. You will also want to clarify what happens to the previous faucet (do you toss it or do they want it reinstalled at the end of your stay.

Reviews are very mixed.
This seems like a risky buy- gambles on small items are easy returns...this you'll have to install .. experience, then remove, replace with another or the old faucet, and return the item

I'm just going to gauge the quality of this and maybe use it for parts, I know I can end up using the spray head on another sink - if it looks like it totally sucks I'm just going to return it... I can't tell if any of those reviews are real or not since they are such a mixed bag...

Sometimes the spray heads are not as interchangeable as you might think- the joint where they retract/clip together does not seem standardized in my limited experience.
YMMV?
