Is this better than olive oil? Need something for deep frying and i was previously told not to use olive oil for frying. Was using canola but looks like avocado is the new thing!

Avocado oil has a very neutral flavor, like canola, but it has a higher percentage of healthy monounsaturated fats. It also has the highest smoke point of all the plant oils (around 520 degrees) vs olive oil (375 - 400 degrees).

What would be "food refined?" Is it heavily processed from its just pure oil extracted from avocado?

It's pure avocado oil with no impurities. Similar to raw sugar (unrefined) being turned into white sugar (refined).

Not that it matters, but RFK has not commented on avocado oil.

He is against seed oils. Avocado oil is not a seed oil.

He is for beef tallow.

I have doubts on the health benefits, but beef tallow tastes better than any plant-based fry oil. Fries made in beef tallow are FANTASTIC, as are donuts.

Oils become rancid when the unsaturated fatty acids in the oil oxidize. This is usually from improper storage (humidity, heat, exposure to air). Those are the most typical reasons and not that there was any problem with the oil itself when purchased (not saying you didn't get a bad one). In all my decades of cooking I have only once had an oil go rancid and that was my bad.
