Easy to reformat, it's more of a marketing thing. Worth buying the cheaper one and easily reformatting the drive.
Sounds like ye olde Apple tax. I mean 256GB of SSD is $200, this is cheap in comparison.

Kidding aside it will work as is. Normally you can keep the FS as vfat32 (aka exfat) but you can reformat it as APFS if you wish.
Yes, it will work on a Mac. The only difference between the drives appears to be the color.

I have the 2TB used on my Mac. Works fine. It is all marketing.

Anyone have experience with the rubberized soft-touch portion?

I have an old Samsung T3 drive with that material and noticed it started getting sticky to touch.

Not sure on this drive but I had the same thing happen to my T3. It was just the outer layer, I used Windex and was able to wipe off the outer finish that got sticky. Sorry to state the obvious but keep Windex away from all of your other electronics
