You are correct. Awful idea to not have on board controls. You have to have a subscription for wifi controls. You must use Bluetooth only w/o a subscription.

I have the v1. which is at least 10 years old. It has no wifi or bt, but manual wheel and I like it that way!

Got the v1 when it was first available and it finally croaked. Do bluetooth only models disconnect if you leave the area?

I believe v1 has Bluetooth. I have one in storage somewhere and I seem to remember how useless the Bluetooth feature was. It worked but was almost never used which is why most people don't even know about it. Look for a Bluetooth icon on the face panel. It's unlit unless connected so you may have to look hard.

The biggest advantage of the early Anovas is the removable screw mount. It gives more flexibility in terms of container height than the attached mounts and clamps used in later models.

So that is not true. You need to app sub to use the device and they are discontinuing the Bluetooth controls end of year....for no reason.

It stays connected as long as you're within range. But honestly, I see no reason to stay connected, especially if you're nearby. Once you set the temperature, there's really nothing else to adjust or even monitor. Low water warnings are so rare that it has only happened to me once, when I sous vided a round roast for 24hrs. I now put Styrofoam packing peanuts over the water, which prevents evaporation and helps retain heat. It's a free version of the ping pong balls.

you might be right, but I never did use BT, i think when I got it, even the app wasn't even around yet or JUST out...

I own a few of these and you should not get this unit. You must pay for the app now that is outrageous for a heater on a stick. This unit is also very underpowered for most uses. The only reason you should get this unit is if you already own a more powerful unit, are grandfathered in to the free app use for 2 years and need a cheap backup.

I have used a souvide for 11 years and use it 1-2 times a week and just don't trust this unit.

How can they discontinue the Bluetooth feature if you're not online, i.e. no Wi-Fi? Anova would have no access to your unit to disable the Bluetooth feature. Unless, of course, the firmware has code that would automatically cripple the unit on 12/31/25. Surely they're not that devious, no?

Nobody needs the trash recipes that the paid subscription gives you. You can still control the device with the app and once the temperature is set you don't need it for anything else. This is a perfect device for a small household on a budget that's looking to explore sous vide cooking.

I imagine they would do it within the app, not on the unit itself. If your app no longer connects to the device, it accomplishes the same (ridiculous) end. Unless you somehow prevent the app updating, I'm not sure you could avoid it.

No reason to pay for the app if you can use Bluetooth. The only possible reason might be to turn the unit on at work so that the food is cooked when you're home.

As for it being underpowered, I disagree. I used the 800 watt v1 for 7+ years and it performed fine -- even for a tank filled with 20+ lbs of chuck and round (132°F for 16-24hrs). The trick is to fill the container with HOT tap water, which is already close to your desired temperature. Then the Anova doesn't have to heat the water and only work on maintaining the temperature. Indeed, the heater is rarely on, which I can tell from the wattmeter it's plugged into. For temperature maintenance, 1000/1200 watts has no appreciable advantage over 800 watts.
