If I remember the knight / soldier was also pretty hard to play solo but just because you'd get swormed by enemies with no other players to distribute aggro. I played a couple of coop games with him and it was much better. No fault to the game, it was designed around MP.
And then you can ground them if they take the food! You're a genius!
