Outside of that it is the typical internet / MS suite / email etc. Would this be enough to do what I want to and have some "future proof room". What or where would this laptop be insufficient in it's specs? I don't need crazy anything. Putting it in car terms, I don't need the Ferrari or even the Porsche, a Corvette would do but don't want a Subaru....

I wouldn't get any laptop with a intel or AMD "U" series processor its in their titles like this one core 7 150U or AMD ryzen XXXXU series. they're the Civic and Corolla of chips.
You're better off with H or HS or Core Ultra chips. More power and processing but also drains battery life (if that matters to you). and their graphics will be more powerful as well for 3D stuff. These chips are more like a civic type R or a Accord Sport (4 bangers with turbochargers)
Bonus if you get a Nvidia dedicated GPU or a Ryzen RX GPU for 3D stuff. These are your corvettes, mustangs, and camaro's. You don't care about gas mileage (battery life) you just want speed.
You want gas mileage? get a prius. You want battery life? get a chromebook
