Has a tiny 51wh battery, but is still 3.7 pounds for some reason. For comparison other LG grams have 72-80wh batteries, but weigh 2.4-2.6 pounds

Normally, only lpddr4 are soldered. This one has the slow ddr4 ram, 3200mhz, I'm 99% sure its not soldered.

FWIW someone asked if the ram was upgradeable in BB QA section. And Ivan from "LG Digital Customer Care" said it was. Hope he's right.

You should read more in specs to understand. The website you posted clearly said "8GB DDR4 (Dual Channel, 3200MHz)". "Dual channel" means there are at least 2 memory stream/modules to simultaneously increase memory bandwidth on motherboard. I said at least because bigger computer with dual channel having 4 slot memory can only read/write 2 memory slot at a time. That is also the problem with the two channels that they should be consistent meaning the pair needed to be identical to one another other or motherboard give out error code and not boost. So they may cheap out with a pair of 4Gb dram.
