I mainly purchased the older movies, but the ones available in 4k show as 4k in my apple tv list due to being movies anywhere compatible.

That is an unfortunate byproduct of how AppleTV shows titles. They show the highest available via their platform—depending which device you're viewing on. On iOS, it shows the highest available. If you have the (Mac) desktop app, it shows you what you actually have. I'm not sure about their TV apps.
A good way to check as well is in Movies Anywhere. If FAH upgrades you, it historically has not ported the upgrades to MA (same goes for when Apple upgrades an Apple-purchased title).

I have compiled a sortable Google Sheet. It lists if the film is available in UHD outside of this deal, and if so, if it has historically been upgraded (30 of 50 are available in UHD. At least 8 have historically received upgrades in the past).

Can you elaborate a bit on this statement? I have purchased MA-compatible titles from a variety of sources, and they have auto-upgraded to 4K with Apple, as far as I can tell. For example, I purchased The Departed as part of an MA bundle, it was only available in HD at the time of purchase, but I now have the Dolby Vision copy in my Apple library, and have watched that copy and it did show DV.

I don't know of any 1080p DV movies; does your statement imply that my copy is not 4K? (Genuinely asking; I always assumed Apple gave you the 4K copy if you had any copy of it through MA, but I could be wrong!)

Believe Apple auto upgrades only if you bought it from them. My MA titles that I bought from elsewhere as HD remained as HD even after a 4K version became available on itunes afaik
