Depends on your use case. If you are primarily working with Office documents like Excel and Word 256GB will suffice. However, if you have other programs like Adobe Illustrator that utilize much larger file sizes you may want 512GB. My M1 MacBook with 256GB is fine for me, but I use it to web browse and budget, I don't run many other programs.

My university buys hundreds of these M series laptops per year. We've had exactly zero fail due to defect. I'm not exaggerating. We've had several fail due to user damage.
Not OP but the low ram laptops use more swap, which increases SSD usage significantly. Theory is most of those low ram laptops SSD drives will have exceeded their rated usage lifecycle counts by now even with low/moderate usage, and since the SSD isn't replaceable this is planned obsolescence by Apple. There is no guarantee a drive will fail though, and your mileage will vary.
Unless you are doing coding or analytics, you will be using google docs or m365. You are not storing data locally, 256 is plenty unless you like to play movies from local disk

My partner is doing a PhD and has 512GB but I checked and she's using less than half of the available storage even with tons of school-related software installed. So get 512 if you can afford it but totally plausible that you'd be fine with 256.

I bought my wife this laptop a few weeks ago. She uses it as a high end Chromebook (only using it for chrome). It has been fantastic for her. We have owned more than 10 Chromebooks and several windows laptops. We use a desktop for real work. This MacBook is fast, amazing battery life, nice charging, reasonably lightweight, good screen, quality build, and good keyboard / track pad. She is very happy.
