Do dog food go stale in sealed bag? I just bought a 23lb bag of Wellness for a 25lb dog. It'll prob take her almost 2 months to go through it. But wanna take advantage of this deal.

One, you should get yourself some kind of "air tight" container for your dog food. You can keep it in the bag and place the whole bag inside. Get one with wheels.
Two, every bag of food has an expiration date on it. Sometimes you have to search for it. The date on most food is often up to a year ahead, so two months is fine. When you get the food, check the exp date.

unlikely, just keep it in a cool, dry place
BB date should be next year.

I already have a bunch of Gamma containers. Just wondering if the quality of dog food goes down after expiration date

It might, considering most exp dates I've seen are a year off, so you should be fine if you order something now.

dog food does go stale and rancid. Most manufacturers recommend that it be used 6-8 weeks after you open it. That expiration date is only for if the bag is sealed. You should also never decant the bag into a different container because the oil residues stay in the container and also go rancid.
If you dog cannot finish a opened bag in 2mo then you should get smaller sizes but you can however stock up on sealed bags

There are dog food deals on premium brands fairly regularly on here. The Origen and Acana half price deal shows up fairly regularly. And Prime days are coming in July and usually there are some dog food deals. I think Purina Pro Plan runs deals frequently on Prime days. So no need to have FOMO. I have about three or four bags unopened of Origen/Acana right now. My dog is 80 pounds of mutt and he will go through it over the next six months or so. He's pretty active and I give him about 3.5 -4 cups a day and have to add in some treats to keep him from losing weight.

I use food-grade liner for the containers

I've never intentionally stocked up on dog food before, since as you say there are deals from time to time. But I've had some good experience with Royal Canin for my older dogs. So would like to at least grab a bag this time
