If movies are your thing, you want to watch them in the best way possible. If you're a huge fan of a football team, you might pay $300 for a ticket (and fighting crowds) when games can be watched at home (in better detail). The same can be said about fans of music or any other art form.
The cinephile crowd doesn't make sense to everyone but movies can't be "experienced live" like other artforms mentioned above. To me, the drive that brings people to live events (mentioned above) is similar to the drive that makes people pursue a home theater system to experience a movie to its "fullest." It is experienced through a TV.
First the TV is upgraded, then the audio system, then from streaming to disc, then the player, and we start over lol.
I'm trying to avoid gatekeeping here but for me, pulling a move off the shelf, putting a disc in a player, hitting play on the title screen is part of the experience. I also want to know that the movie I'm watching is as close to "how the director intended it" as possible. Why? It's the closest I can get to the "artform" that I love. It's more immersive, etc. Is the accuracy difference detectable between a dedicated player and a gaming console? It's again, subjective. I appreciate all the tweaks this player offers if you get that deep. Most people upgrade to this for the auto Dolby Vision detection. You put your disc in and know it will pull the best visuals you can get (versus having to figure it out and change a setting). Also, gaming consoles (were, not sure anymore) unable to play Dolby vision off a disc. I like the audio going to my receiver directly and video to my TV directly as well. My HDMI input on my TV is locked to gaming mode so utilizing a second input for movies is also great.
I never intended this to get so long, but I'll post it at this point.
In the end, I think I'm just getting old. I wouldn't make any sense to the 20 year old me. Though video rental stores would help justify it!

But do you need a dedicated player that costs another $400 when you already own the PS5? Probably not, unless you're an enthusiast.
$399 is a good price to those that know what they want. It's rarely ever lower than this. Even having a console on the same TV I enjoy having this for my dedicated 4k player. The separate audio out option is convenient depending on your setup.
Deals like this are completely subjective. $400 on this vs. a virtual pinball machine vs. Taylor Swift tickets vs. a PS5 sure look like a deal to some people while being a waste of money to others.

If you don't need/don't have a TV capable of Dolby Vision then the UB420 or PS5/Series X would be fine for most people.
Some of the cheaper Sony ones will do Dolby Vision but from researching AV forums, they tend to break easily and don't have nearly as good of tone mapping as the Panasonic.
