By coincidence I started making cornbread from scratch last week, and it's so easy that even this mix seems like overkill (the only ingredient I didn't already have around the kitchen was buttermilk). Takes about as much time to mix the raw ingredients as it does to combine this boxed product with the milk, butter, and egg it requires.

Cornbread is super easy and cheap to make. Unless there is some substantial taste difference with these, it seems like its basically just saving 2 minutes of mixing dry ingredients together.

This deal is the equivalent of $1/lb for cornmeal. Can you buy it cornmeal for that?

Your calc assumes this mix is almost all cornmeal, which it's not. This is cornbread mix for $1.10/lb. Lidl sells Jiffy (also cornbread mix) for 60 cents a box which is $1.13/lb.

Most cornbread recipes follow a 1:1 cornmeal to flour ratio. So since less than half of this mix is cornmeal, you're actually paying closer to $2/lb for cornmeal through this mix.

Cornbread... In the South...
2 cups self-rising cornmeal
2 lg eggs
1.5 cups buttermilk (if you don't have it, you can make it in a few minutes, but not with fat free milk)
1/4 cup oil
1/4 tsp salt

Heat oven to 450
Grease a cast iron skillet or baking pan if you don't have one... But everyone should have one. Put it in the oven to get hot while the oven is getting up to temp. Mix all ingredients well. Pour into hot greased skillet. Bake 20-25 mins.
No Sugar or Honey!

After it's cooked take it out of the pan, slice and butter it well. Now add honey to it if you want a little something sweet after dinner. But do not put sweet in it until it's cooked. Trust me on this one.

This really isn't a deal, this is the normal price for at least the past several months.

BUT it is a cornbread lovers thread and I appreciated the corn bread recipes and talk! More corn bread threads!

I got this thinking it would be a time/effort saver over DIY but it really isn't. It requires melted butter.I I use oil but these packages come out too tender and fall apart when served when made with oil. I also find them too sweet.

Sure can, all day every day (although this mix is obviously more than just cornmeal). I usually buy Indian Head for around 50 to 75 cents a pound depending if it's on sale. Walmart around me has the 2lb for $1.53 (regular price). It's often on sale in Nov and Dec at local supermarkets for holiday baking for less. I haven't looked at Aldi or Lidl but imagine they are probably around the same for their white-label brands.

Looks like they purposely left out sugar/honey. I have to say, I'm intrigued, as I generally like a sweeter cornbread but really should cut back. Sometimes I used canned cream corn and get some sweetness from that.

I converted years ago to baking in a pre-heated cast iron skillet instead of Pyrex. The browning of the skillet makes a noticeable difference.
