VA has offers more truer black colors and at the price-point will typically be faster (higher hertz) than IPS. IPS has better viewing angles and more vibrant colors. Keep in mind I'm referring to similarly priced panels.
I strongly prefer IPS for working. I've used both VA and IPS and got rid of my VA monitors on my work computer. I prefer the color accuracy and viewing angles of IPS panels. Some VA monitors have good color accuracy but they generally are not as good as similarly priced IPS monitors.

High refresh rate doesn't matter as much for work, in my opinion. I'd rather use a 4k monitor with 60 Hz refresh than 2k with 144+ Hz (I have one of each in my current set up and use both, but for productivity, there is no difference between 144Hz and 60Hz -- gaming, yes). Real estate via screen resolution is nice to have. Or, get multiple monitors.
VA display if it matters to anyone.

Which is better for working? If I'm just looking at excel, PDF and Word documents and zoom meetings? Would I want IPS at a high refresh rate and 2k?

VA suffers from terrible ghosting, at least from my experience on PS5

VA panel = don't buy this for first person shooters, there is some ghosting effect for fast moving objects. Totally fine for any other genre of game, and good color accuracy for shows and movies etc.

Why all the monitor deals are for gaming monitors? I just need an office monitor, waiting for a deal

It was on sale for $169, few weeks back. If anyone has bofa or chase credit card with walmart cashback offer, there was a 10 to 15% cash back also available.
One thing I realized after buying big monitor, if you move your cursor a lot on the screen from top to bottom, it becomes tiring for your hand.
For work, buy the size which is really needed.
