Good buy if you can take care of it... snippet from one of the reviews:

Improper cutting technique, or improper care can easily damage the edge of this knife, rendering it useless. I would suggest anyone who owns this knife to be careful when washing it in the sink. If you drop it or bang it against steel sink/faucet, or other items in the sink, don't be surprised to see nasty chips in the blade. This is generally not a problem you need to worry about with the more robust German knives like Wustoff or JA Henckels.

I use these knives and Im not careful with them. I end up with very small chips out of the edge that are easily resolved with my automatic knife sharpener. I used to manually sharpen with various grit stones to achieve the sharpest edges, but the juice wasn't worth the squeeze. It's probably 95% as sharp with the automatic sharpener after 30 seconds and it's good for another month or so. These are great knives along with wustof and global.. all are in the same tier imo.

Walk-in, but only if you live in a very specific zip code in Oregon!
But yes, $15 flat fee is as good as free. I sharpen my Wusthofs at a housewares store. about 8-12 per blade. The only thing with shipping is I send all of my Shuns at once due to the flat fee; just realized it's $2K of knives in a single package.

NOT so in my experience. I have the Chef's Choice Edge select 120 knife sharpener that I use regularly to sharpen my Shuns when needed and it does an EXCELLENT job keeping them almost as sharp as new. Granted it is a 20 degree angle sharpener but, if you are worried about keeping the actual 15 degree original angle intact, Chef's Choice also has the model 1520 (for a premium price) that will do so as it will sharpen at 15 or 20 degrees.

I worked in professional kitchen as a line cook when I was young

Went through a couple of knives

I have Shun Premier at home. But 90% I'm reaching for Global 8" chef knife

The fit to your hand matters. I'm just naturally comfortable with Global

Shun feels bit brittle. I have not chipped mine, but it feel like I can break it…

Not in love with how it feels when I cut …


Try cutting potatoes , onion, etc

The right knife "feels" predictable and comfortable. It does what you think it will do.

If you get a knife that does something different then what you expect ( feel, speed, sharpness, grip) I would try again with different brand.

They likely use a belt system to sharpen their knives. The particular steel they use is rather brittle which makes it quite easy to chip.

This is decent price for a Shun, though if you don't care about brand name, design, or free lifetime sharpening you can get a Tojiro or Takamura which will perform better for around the same price.

Good to know! Tojiro I found on amazon, maybe my local knife shop has Takamura.

It takes a little practice, but it's not that hard to lean to use a diamond sharpening stone to keep these razor sharp. Invest in a honing steel to keep them sharp for a lot longer between sharpenings. I haven't sharpened our Shun chef's knife in nearly a year by using a honing steel regularly. It's definitely due, though, as cutting tomatoes isn't as buttery smooth as it was before.

As for automatic sharpeners, I used to be in the stones only camp. I will only use stones on our knives, but use whatever keeps your knives sharp. A dull knife is a dangerous knife.
