Just the start button, but controls for temp and time are through the app so you must connect through your phone by Bluetooth. The subscription service is for access to more information as well as internet via wi-fi so you can monitor cooking from farther distances than you can reach from just bluetooth (away from the house, e.g.). You can use this without paying for the subscription service.

I had a sous vide cooker for many years but have moved away from using it so much and now am doing more reverse-sear cooking where I start at a low temperature in the oven and then sear at the end. I use a remote thermometer to monitor the temperature of the food in the oven so it doesn;t overcook. The low cooking temperatures will be close to 200F, so it's not as foolproof as using the sous vide which can precisely regulate the temp you select.

But, one advantage of the reverse sear is that the initial low temp cooking dries out the surface of the meat making it easier to sear, whereas you always have to wipe down the sous vide cooked food before searing.

But, with recent concerns about micro-plastics in food, I am not sure if the plastic I use in the recloseable zip-loc style freezer bags is entirely safe when using it for sous-vide cooking. I have not seen or read definitive evidence either way, so I decided to reduce cooking in plastic until there is more scientific evidence on the subject.

EDIT: The general consensus is that the polyethylene plastic used in such recloseable zip-loc-style bags does not release significant harmful chemicals when used at the temperatures involved with sous vide cooking.
I'm gonna need buttons on mine. Bluetooth only suggests that it'll be wonky.
I purchased this last time it was posted because I figured it was a small investment to try this new cooking technique. I love it. It has made cooking my proteins so much easier. For this price I absolutely recommend it. I figured when/if it dies on me I'll invest in the nicer model.

If this is only app base I believe you need a subscription unless you have an existing account before August 2024

Nvm. Looks like no subscription for Bluetooth control

Looks like you have to use the app with these? No physical buttons or screens to start it otherwise?

I bought a Strata Sous Vide cooker from Monoprice 8 years ago, and one problem I had was that on long cooks, the steam amd moisture would sometimes cause the cooker to stop. I suspect it had to do with a possible short within the electronics that would disappear when it had time to dry out. The Anova website mentions this cooker has a IPX7 water resistance rating, so there's a chance it may be more resistant to damage from moisture. Physical buttons can be susceptible to failure--as can a bluetooth connection between cooker and phone.

I like my ANOVA
This is a good price..
I don't mind app access.
But to require an app to even use basic functions is a deal breaker for me

Yeah, I agree. A simple "+/-" temp set button would be all you need. But, I do like the IPX7 water resistance rating for this.

I have the nicer model and bought this as well. Works similarly but I like controlling it on device. I wouldn't spend another $70 to do that though

Read the one and two star reviews and they mostly complain about the app aggressively using pop up ads and app functionality. Anyone else have this model and can give some input on the device ?

I can't tell from the picture: is the clamp that connects to the pot detachable for this model?

I got an Anova from a Walmart clearance sale 5 or 6 years ago. It's pretty fantastic. No quality issues. The only issue I've had is that they don't make a custom lid for this brand for the plastic tubs that it's popular to use these with. I cut one myself, but it's never been quite as nice as the custom one my friend has. Maybe that's better now, but also for this price, it's way too small an inconvenience.
App only temp/timer controls does kill this for me, though. On-demand obsolescence is not my idea of good design. That said, for this price, it's probably worth it even if the app is only supported for a year or 2 (cause it'll probably stay functional for a couple years beyond that).
