Black is beef broth, richer taste; gold is chicken broth, milder taste (my favorite); green is veggie broth, lighter taste.
Black is beef bone broth, not just a beef broth. Analogous to tonkotsu being a pork bone broth, black was initially created to imitate the Korean gomtang stew (beef bone broth)

The average person would find all of them spicy (Gold, Black, Original). The small golden wording surrounded by red on the left side of the large black Korean character on the bowl says "Spicy" in a bunch of different languages.

Spicy ramen lovers will claim gold and black are less spicy, but to the average person there is little difference in heat.
