The gourmet line is stamped instead of forged. It's the wusthof classic that is famous.

It is definitely not the same steel. Wusthoff uses X50CRMOV15 for both their forged and stamped knives. The knives you linked are C-65510, which is a steel that isn't designed for knives. That's why no one uses it for knives (accept apparently this TikTok ad Chinese company).

I can also guarantee you that those knives are NOT forged. Stainless steel knives are notoriously hard to forge, and why very few knive companies are able to do it. There's no chance those cheap Chinese knives are forged (for that price especially). Chinese companies are notorious for lying about knives being forged, because it's impossible to tell with the naked eye.

Edit: I see now that they're listed as X50CR further down. The Amazon listing has 65510 in the title for some reason. That's my fault. Looks like they ARE X50CRMOV15. The listing also says they have a FORGED BOLSTER, not that the blades are forged. At least they're not technically lying, but are just a bit deceptive, as a forged bolster is much less important than an forged blade in a kitchen knife, and most people will just see the word forged and not know any better.

Hey, where are you seeing that because in the listing it says the knives use X50CrMoV15.

Also Costco has sold Cangshan knives that claim this steal for years and their supply chain is among the strongest, so without a strong source I am leaning to you being misinformed. And they certainly aren't a tiktok company, lol.

Thanks OP! In for one. Site says Made in Germany and so not sure why someday said China. I have a Henkel knife set that needs to be sharpened every 3rd time-definitely Chinesium and headed to Goodwill lol

Wustof is a good brand. In for one. Not a fan of Woot however; not sure if their stock is just secondhand s**t, but its usually not as a good as buying from mfg. Hopefully I'm wrong this time.

I think 65510 is actually Cangshan product ID. All their knives and sets have a number associated with them, Ironically 65510 is actually a steel so that's super confusing, and that's on them for making the mistake to use that number in the title when they don't always do that.

Seems like that $40 set is no longer on sale anyway. Back to $80 now. I wasn't aware they could stamp a blade but forge a bolster, so that is new to me. Anyway they still have some great knife options on sale still. This FULLY forged x50 santoku is only $22.50

But these are not a better deal than the Wusthof set for $50. Only a good deal if you're just buying the Wusthof set for the Chef's knife. The $40 cangshan set, stamped blade or not, was a slick deal IMO. Maybe I should have posted it.
I know I sound like a product schill, I promise I'm not. I am an amazon vine reviewer so I get a ton of knives to test. Most I give away to friends and family. But Cangshan knives have consistently been the best and I tend to keep them. Not all of them mind you, a couple months ago I got their TN1 chef's knife to review and honestly I can't recommend it. It looked great but it was all style over actual utility. Balance was all wrong and it was just uncomfortable to actually use. This is a knife you give someone as a gift to put on their knife strip and never use.

If you like knives, some other brands I can recommend that actually preform great despite not having any pedigree is Keemake and Hoshanho. I don't think Keemake makes their own knives but everything I got from them so far has been great, so they're at least being choosy and sourcing from a quality plant. They have an 8" chef's knife in 1.4116 that I personally own and can vouch for, for $19 right now on amazon right now.
Hoshanho seems to make their own knives and everything I've gotten from them has been great too. I haven't tried it personally but they have an 8" chef knife made from AUS10 for $30 right now.
